Chocolate Chip & Cranberry Cookies

The kiddo and I wanted cookies this weekend… so, cookies are what we made! 🍪👩‍👧 🙂 The weather was cold, so it was the perfect opportunity to use ingredients I had on hand. I came up with dark chocolate chip & cranberry cookies. They were soft, chewy… not too sweet, but sweet enough to kill our craving… and they were delish! 😋

Dark Chocolate Chip & Cranberry Cookies

• 8 Tbsp salted Kerrygold USA butter (softened) • 1/2 c coconut sugar • 1 1/4 c brown rice flour • 2 scoops Ancient Nutrition Vanilla Bone Broth Protein powder • 1/2 tsp baking soda • 1/2 tsp pink Himalayan salt • 1 dropper liquid vanilla stevia (or tsp vanilla extract) • 1 organic cage free egg Happy Egg • 1/2 c dark chocolate chips 70% or higher (I used dairy/gluten/soy free) • 2 boxes (280g) organic dried cranberries

Preheat oven to 375°. Cream butter and sugar together. Slowly add in dry ingredients. Add egg. Mix in cranberries and chocolate chips. Spoon onto cookie sheet coated with coconut oil non-stick spray. Bake 9-11 min. Makes 20 cookies total.

(The kiddo didn’t want cranberries in hers, so I only put 1/2 the cranberries in 1/2 the mixture. These would be great with walnuts or pecans, as well)
